What is yellow tea

The exotic yellow tea comes, like all other “true” teas, from the Camellia sinensis plant. Its unique color and flavor is closely related to its processing. 

Yellow tea is quite rare and is produced only in China, making it quite expensive. It is not easy to find, but those who have had the pleasure of tasting it say that its mild and slightly astringent flavor is simply delicious.

As with green tea, it is a slightly oxidized tea but, in this case, after harvesting the leaves and subsequent rapid cooking, they are wrapped in a special damp cloth. This step is called men huan (yellow sealing) and is repeated several times, depending on the desired result, allowing a short, controlled oxidation to occur. Subsequently, the tea dries completely, slowing down oxidation. It is precisely this process that gives it its characteristic color and softens its flavor.
